Dinner Inspiration: December
In case your were looking for some new recipes to throw into the dinner mix this week, here are a few that I’ve tried recently:
Macaroni and Cauliflower Cheese Bake (Vegetarian): The only way I’d encountered cauliflower prior to this was as the sad neglected vegetable of many a crudité platter. Now I know if has so much more potential! This is so easy and makes you feel like mac and cheese is actually kind of good for you.
Pomegranate Couscous (Vegetarian): I omitted the golden raisins (only because I don’t like them, feel free to throw them in) and the Israeli couscous, then just cooked the regular couscous (Trader Joe’s Whole Wheat is my favorite) according to the package directions and added everything else in. I served it with a simple roasted chicken (Julia Child’s recipe, of course).
Tomato and Sausage Risotto: An interesting take on risotto that is truly a one pot meal (main, side, and salad all in one!). I used about half the amount of spinach called for added and extra cheese (you could also sub frozen spinach). This is also one of the few risotto dishes where you can substitute red wine for the white and not have it look like purple/grey goo (which I did, it was good). And just omit the sausage for a lovely vegetarian dish!
